The Perfect Pea Soup
Just the right dish to warm your soul during our wintery January days.
Ingredients:
2 cups dried peas (soaked overnight)
2 cups water
1 1/2 tsp sea salt
2 tsp canola oil
1 medium onion, chopped
1 pear, chopped or pureed
1 1/4 cups milk
1 tsp cayenne pepper
1 tsp cumin
4 tbsp olive oil
fresh parsley to garnish
What to do:

Soak the dry peas overnight in fresh water. Strain and rinse the peas. On stovetop, in a medium saucepan bring water to a boil. Add peas and sea salt and let simmer for 40 minutes to an hour, then let stand.

In a separate, deep, frying pan, add the canola oil and bring to a sizzle over medium high heat. Add the chopped onion and cook until you smell the onion, about two to three minutes, while constantly stirring. Add the chopped or pureed pear, then add the milk, cayenne pepper, and cumin and cook for five minutes.

Combine the mixture with the peas and let simmer for five more minutes. Stir in the olive oil.
- Serve soup garnished with parsley in beautiful bowls.
With pita bread, this sumptuous soup makes four servings for a great lunch or dinner — or even breakfast if you please.
