Parmesan Salmon

To ensure healthy eating, quick weeknight meals are a must in my household. It’s all too easy to pick up a pizza or fast food on the way home, but with just a little bit of planning, you can whip up a healthy and fast meal in the same amount of time it would be to wait for that pizza delivery. This salmon recipe is just the kind of dish I’m talking about. It takes no more than 15 minutes to put the whole thing together and with a cooking time of just 10 minutes you’ll be at the table in no time.
Ingredients
- 6 salmon filets
- salt and pepper
- 1/3 cup Panko bread crumbs
- 1/3 cup grated parmesan cheese
- 1/4 cup fresh, chopped parsley
- 1/3 cup butter, melted
Directions
- Pre-heat oven to 400 degrees F
- Lightly oil a baking sheet and place salmon on it
- Season with salt and pepper
- In a bowl, combine the bread crumbs, cheese and parsley
- Pack crumb mixture on top of salmon to form a crust
- Drizzle melted butter evenly over top
- Bake until salmon is just cooked, about 10 minutes
